Many vegetarians love oriental food. While a lot of their food cannot be considered vegetarian, if you tweak some recipes you can make yourself some delicious healthy oriental vegetarian recipes.

Easy vegetable stir-fry

Take all the vegetables of your choice like, onions, pakchoi, carrots, cabbage, beans etc and chop them up. Chop up some ginger and garlic; take 1 tsp cornstarch, 1 tbsp soy sauce, 1 tbsp vinegar, 1 tbsp oil, salt and pepper to taste and some vegetable stock. Take a wok and add the oil, add ginger, garlic and then the onions and slowly put in the rest of the vegetables. In a separate bowl take the cornstarch and add a little water in it, mix it well. Add this mixture to the wok along with the soy sauce, vinegar, vegetable stock and salt and pepper. Serve hot with rice or noodles.

Grilled Oriental vegetables

You will need 1 large yellow squash cut into small ½ inch pieces, 1 onion, 1 red pepper, 1 green pepper, 1 tbsp coriander seeds, 2 tbsp soy sauce, 1 tbsp honey, ginger cut into small pieces, 1 tsp sesame oil, 2-3 cloves of garlic chopped and a few skewers. Crush the coriander seeds in a big bowl; add the soy sauce, honey, ginger, oil and garlic. Then slowly put in the vegetables in the bowl and let it stand for 20 minutes. Preheat the grill while you put the veggies into the skewers. Cook for 2-3 minutes on each side and serve immediately.
